About Rock Island Cast Iron

When I first started using cast iron, I was frustrated. I had a cheap Lodge skillet, and it just didn't work well.

I found out my frustration was due mostly to the rough cooking surface. So I searched for a solution, discovering that a rough pan can be ground smooth and become a great pan.

I tried it (I'll admit, I was a little nervous, and my wife thought I was being ridiculous). That first pan turned out only okay, but I could tell it had potential. I decided this was something I could do for others, too. I kept grinding pans for friends, learning more each time. Now I've ground over 800 pans and the results are fantastic!

Rock Island is the name of the railroad line that used to run between Colorado Springs and Chicago, via Rock Island, IL. Most of it is completely gone now. A portion has been converted to a multi-use trail that stands a half mile from our house (where I live with my wife and four sons).
